We have two more weeks on our journey to a meatless August and food for life and health! Hubs and I have been eating meat-free since July 11th and it is going quite well. I know I feel really good and I zipped up a pair of shorts for the first time this summer! That’s good news, right?
A few more Basics for Healthy Eating.
Tip # 3: Eat a variety of foods! Expand your diet. The average American diet consumes mostly wheat, dairy, corn, meat, and a handful of vegetables and fruits. This limits your nutrients and can lead to allergies. Experiment with different grains such as buckwheat, spelt, oats, rye, quinoa, barley, rice, soy, just to name a few. Add some unfamiliar fruits, maybe kiwi, papaya, or mango; vegetables, try sweet potatoes, butternut squash or eggplant! Step out and expand your food horizons.
Tip #4: Avoid aluminum and non-stick cookware. Aluminum is a soft metal and reacts with sodium and acids, which are in most foods. Both aluminum and non-stick cookware wear off and end up in your food. The best cookware is stainless steel or cast iron.
Now for this week’s features. Squash Casserole and Mexican Brown Rice. I’m making the rice THIS week!
