I met Melissa years ago by way of Write 31 Days – a writing challenge every October where one writes on one topic every day for 31 days! We are members of a Write 31 Days Facebook Survivor Group! Melissa experienced a devastating life event a few years ago – a house fire. She and her family were unharmed but it was the beginning of a complete life-changing season.
In my opinion, she has weathered it well. Melissa is a wife, mom of three humans and two furry creatures! She is a minimalist and a vegetarian. Oh yes, and she loves paper. And, pens. And, markers. And, stickers. And, bullet journals. And, planners. You get the picture?
About eight years ago, Melissa began eating vegetarian. She explains her transition here:
I’ve been a vegetarian for 8 years now. I started this journey because of health reasons, but have continued it because the more I learn about the way our food is produced the more I feel convicted to eat ethically. My husband and children are not vegetarians, but over the years we have learned to compromise and find a balance. The majority of the meals I prepare are vegetarian, and my husband has even learned to love tofu. While my family does not share my ethical convictions, they enjoy my cooking enough to eat minimal meat with no complaints.
Meet Melissa and enjoy her Pickle Pasta. The recipe is on a printable below and I really want you to go over to her website here to see all the steps and the great photos! Beloved, I pray that all may go well with you and that you may be in good health, as it goes well with your soul. 3 John verse 2
So fun to see my friends visiting at other friends blogs. I’ll have to give this recipe a try. I love my pickles!
