You know the saying, “If it’s not broken – don’t fix it,” well, that applied to the menu for this past Saturday’s girlfriend luncheon menu. There are four of us. There are four seasons to the year – that means we each take a season and host a girl’s lunch. Mine is always summer and usually, August, just in time for the yellow-jackets to be a nuisance. Argh! We did manage to eat on the porch although I kept a fly-swatter at the ready and only needed it about 9 times. It was a pretty, sunny Saturday after a full week of wet – another thing we managed to do? Sit on that porch from 1:15, when lunch was served, until 6:30 when I told them it was time to saddle up and leave! Just kidding. (You can read about last year’s lunch here.)
Back to “if it’s not broken” – I fixed the same steak salad I served last August! It was so delicious and a big hit, I thought why not? There wasn’t one complaint! Last year Mrs. Callander came and provided a coconut cream pie, this year Edward came and provided a key lime pie with extra whipped cream. Just because who doesn’t like more whipped cream! As the afternoon waned and I was complaining of the heat, Miss A reminded us all that last year we ended up in the house because it was so chilly. I immediately quit grumbling!
The day was perfect! Our conversations are always edifying and encouraging. We share our hearts and our motto is, “What’s said on girlfriend day – stays at girlfriend day.”
Friends – when Jesus is at the heart and soul of friendship? It just doesn’t get better.
The recipe is in the printable and I highly recommend it as the perfect summer dish!
Bon Appétit!
Beloved, I pray that all may go well with you and that you may be in good health, as it goes well with your soul. 3 John verse 2
Recipe looks fabulous, a girlfriends’ day sounds even better!
I can only imagine……………………*smile*

Steak isn’t my go-to, but a girlfriend’s lunch sounds amazing! I don’t have too many in my local circle any more and I am missing that companionship.
