Summertime is upon us. Time to keep the cookie jar full and the lemonade ice-cold and at the ready!
These cookies are a good healthy alternative to packaged crapola cookies (my mom always used that word, crap-o-la!).
Healthy Oatmeal Cookies
- 1 & 3/4 sticks of butter
- 3/4 tsp Stevia (2 packets or taste-test the dough)
- 2 eggs
- 1 large egg white
- 1 tsp vanilla
- 1-1/4 cups flour
- 1 tsp sea salt
- 1 tsp baking soda
- 1 tsp cinnamon
- 2 cups regular, not instant, oatmeal
- Optional add-in’s: raisins, chopped-up dates, craisins, nuts, choco chips, choco-covered raisins.
- Preheat oven 375°
- Mix everything (above).
- With spoon, drop cookie dough 2-3 inches apart on parchment-lined cookie sheet
- Bake 8-10 minutes
- Remove, cool.
- 40 cookies
***I’ve not made these gluten-free, but I’m thinking if you substituted G-free flour and oatmeal? You’d have a sure winner!
