We had our annual church pool party yesterday afternoon. We got home from church about 1:30 and we needed to leave for the pool about 4:30 – so I came in, changed clothes and immediately began prepping food in the kitchen. I made Red and Black Bean Salad, you can get that recipe here and I had all the fixin’s for a berry cobbler. I took it out of the oven about 15 minutes before we were due to leave. Placed it in a shallow cardboard box, wrapped in a towel to stay warm! On our way I had hubs pull into the grocery store and I ran in and bought one gallon of store brand vanilla ice cream, a box of plastic spoons, a package of 8 ounce paper cups, and a bag of ice, $12 total. Once we were at the municipal pool we got the ice cream in a styro cooler and surrounded it with ice. The cobbler, only 8″ x 8″, was still very warm. Soon after everyone was fixing their plates at the picnic buffet and some were already swimming. I was in charge of the cobbler – it was NOT on the buffet table! About an hour later I began asking who wanted some cobbler and ice cream – two scoops of the ice cream and one generous spoonful of cobbler filled the paper cups. A perfect serving! I felt like the ice cream truck lady! Everyone who wanted some got some and then a funny thing happened, kids, whom I’ve never seen before began congregating, “I’d like some ice cream please.” Y’all I have never seen a gallon of ice cream and a small cobbler ever go so far and feed so many – I believe we had a dessert miracle!
