When I used to watch Oprah (before I got convicted not to) I always liked her “favorite things” shows. I would think how blessed that audience was to have been there at just the right time! I have a lot of favorite things and I’m starting to get even more now that Pinterest has been added to my things to do while on the Internet! Are any of you Pinterest users? It is definitely a unique site to browse through – and oh my, the ideas. So many ideas and not enough time to do them all!
Today, February 28, 2012, is a perfect Spring day. Temperature is about 66 degrees. There is not a cloud in the perfectly blue sky. The pine trees are gently swaying in the meadow, the birds are chirping and the sun is bright and warm.
A perfect day to hang out clothes to dry! Sharpshooter even got in on the task!
A perfect day to make Butternut Squash Soup! Recipe to follow!
A perfect day to open windows and let the winter blues escape.
And, it is a perfect day to remember my Grandmother Emily Chamberlain – she was a leap year baby and always celebrated her birthday on the 28th. A lot of who I am is from my Grandma – happy birthday Grandma!
This is the perfect day the Lord has made, let’s rejoice and be glad!
Butternut Squash Soup
- 1 large butternut squash
- 1 med onion, chopped
- 6 cups chicken or veggie broth
- 1-2 cloves garlic, minced
- 1-2 T. olive oil
- Nutmeg, to taste
- S&P, to season
Peel squash. Cut in half, scoop out seeds and cut in one inch cubes. Gently boil until soft. (You could also just cut the squash in half lengthwise, place flesh side down in a baking dish, with one inch of water and bake at 350 degrees for 40 minutes.) This morning I used the crockpot to do the cooking of the squash. Let the cooked squash cool down. In the meantime, sauté the onion and garlic in olive oil until tender. Now, place the cooked squash in a powerful blender or your food processor, with a little of the stock. Process until smooth and thick. Add mixture and broth to the onions and garlic. Season with salt, pepper and nutmeg. Heat to simmering. Serve piping hot. Delicious and extremely filling because of all the fiber! This creamy soup freezes very well.
A perfect soup for the perfect day! Bon Appetit!
Love it! Thank you.
I, too cannot/will not watch Oprah…convicted long long ago.
I didn’t hang out clothes today….BUT!!! I – pruned bushes, raked leaves and transplanted day liles ~ in FEBUARY! What an awesome day, thank you Lord!
The soup is good, I do it with pumpkin and add mushrooms and wine. Makes me want to go to the canning house and get to cooking! Thanks Susan 🙂
Words of Spring, how sweet to my ears. Springtime reminds me of Salvation. First dying, to our old sinful nature (Fall -of man and our sinful nature and Winter- the death of the old man) and then Being Born Again.(Spring -rebirth-and Summer-walking in the light-) A new creature in Christ. A new beginning, starting over with the past dead and gone. I am most gratful for this second chance to be reborn again and grow in a relationship with my Creator.
Today, I was noticing the grass turning green as I sat on my front porch steps, just soaking in the warmth of the sun. The gentle breeze comforted me, as I sat and Thanked my Father, for the beautiful day that He had made. May God Bless each of us with a renewing of our First Love, as we step into the newness of another Spring and all the wonderful sounds, smells and beauty that it brings. Blessed of God, Arnai
Happy Birthday Grandma. I believe this is one of those times that the window to heaven opens and you get to take a peek at earth! I know you will find my sister’s and my lives have been changed by your influence. How we are honoring the Lord because of you. Did you have it all right? No, but you had the most important part right, you loved the LORD
Great read………I never was too crazy about Oprah! Won’t watch her! And next Saturday night we set our clocks forward! Spring is not far away….I say that with snow flurries blowing outside!!!! Hope is a wonderful thing, Sus!
People cannot live without HOPE.
