My granddaughter loves honey mustard dressing and we have already gone through one big Walmart Great Valu bottle of it – the problem is, we all love it. After reading the ingredient listing on the bottle I knew I just had to figure out a fairly healthy alternative. This morning was test kitchen day and, “By George, I think I’ve got it!” (said in a true Cockney accent)
Fairly Healthy Honey Mustard Dressing from Susan’s Test Kitchen
- 2/3 cup extra virgin olive oil
- 1/3 cup honey
- 1/3 cup (good) Dijon mustard
- 1/4 cup rice vinegar (or other MILD vinegar)
- 1 tsp good sea salt (PLEASE NOT MORTON UMBRELLA GIRL SALT)
- 1/2 tsp coarsely ground black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
Combine all, whisk the daylights out of it. Refrigerate. Remove from refrigerator one hour prior to serving. Or, just stand at the counter and dip long lettuce leaves into it until gone!!!
